Cole’s Deliciously Patented Pickled Red Onion
Coles Recipe for pickling anything –
*Nicole has informed me that no one likes reading a paragraph trying to find the recipe so I will be posting a link to the recipe I am using, or if it is mine, the super vague directions at the top of all posts
- Whatever you are pickling (cucumber spears, red onions, Jalapeño)
- 50/50 white vinegar and water into a sauce pot (amount depends on size of jars and how much they are packed)
- You can add basically anything for flavour depending on what you like
- My favourites: roughly chopped garlic (3 cloves), table spoon of black peppercorns, dried red chilli flakes, mustard powder, dill seeds, dill weed, teaspoon of salt
- Simmer in the pot all together for 5-10 minutes to release most of the flavour
- Pack your pickling ingredient into glass mason jars
- Turn the jar sideways makes it easier to pack tighter
- Pour the contents of the pot over the pickling ingredient up to a couple cm’s from the top, put the lid on and leave to cool down before putting in the fridge
- The cooling liquid will vacuum seal the jar as well and put into the fridge for at least two days before consuming for maximum deliciousness

I have been an avid pickle fan over the the years and decided to get into doing my own pickles so that I can control the flavour and learning new things is fun. My wife has been enthusiastically pushing for me to try pickled red onions for months so gave it a shot.
My pickling recipes would be called by most a 2 day pickle or a 2 week pickle. I don’t go through the pickling sanitation process so the end result is not shelf stable and needs to be stored in the fridge. Once made it lasts for over a month in my experience, though rarely makes it that long in the fridge.
Note: Substituting other types of onions will have quite different results given the varying astringency

Specifically for this recipe I added all the flavours mentioned above but dill seed and weed; I didn’t think the dill flavour would compliment the ingredients. Also added the Jalapeño peppers to the onions so did not use red pepper

Ended up turning out exactly as planned (unusual in this household) with delicious flavours of the red onion accented fantastically with the heat from the pickled Jalapeño – Use in sandwiches, Cesars, snacks or anywhere else onions are welcomed

Pretty much at this point – My weekly grocery shopping struggles to keep up with the household pickle demands 🙂
