There Will Be No Leftovers; Potatoes Au Gratin

Au gratin or scalloped potatoes (the internet has led me down too many dark holes trying to find a definitive difference between the two; some say cheese, some say how it’s cut; whatever) are a delicious dish that needs to be tasted to be enjoyed.

I prefer to serve it with ham as I find the salty and sweet nature of the honey basted ham balances with the cheesiness delightfully.

The recipe calls for a very different onion to potato configuration that what I have going on here. I didn’t read the directions and sliced up the onions incorrectly my first time making it; the result turned out so well I have stuck with it. Layer thinly sliced potatoes with onions until you run out of either.

I made a roux with flour and butter before adding in the gruyere and cheddar cheese. After pouring it over the potatoes, liberally salt and pepper.

Put in the oven for 60 minutes covered and then 30 minutes uncovered to crust up.

I really can’t state how properly delicious these are when well seasoned. Twice I made 3 pounds of potatoes with this recipe and there were zero leftovers between 4 people; hence the title. Try it this holiday season, try it soon, try it today!
